FRITTERS
40g courgette
½ fresh chilli
40g sweetcorn
60g Isle of Wight white crab meat
40g flour
½ tsp baking powder
1 free range local egg
A little milk
SPICED YOGURT DIP
50ml natural yoghurt
1/2 fresh chilli
Oil for frying
Hampshire watercress
FRITTERS
1) Dice the courgette into small pieces
2) Finely slice the chilli
3) Mix together flour, baking powder, egg, and milk together and add sweetcorn, courgette and crab and half the sliced chilli
4) Season with salt and pepper
5) Spoon a little of the mixture into a hot pan with a little oil – make sure it is sizzling hot
6) Fry until golden brown and cooked through
SPICED YOGURT DIP
Mix natural yogurt with half a chopped chilli. Serve the fritters
with freshly picked watercress and spiced yogurt
